Crystals from grape jelly

* Left: By cooking grape juice with sugar containing pectin,  you will obtain a jelly.
  When you eat a bread with this grape jelly your tongue will feel something hard. If you chew it,  you will get  a sour taste.
* Photo 2: This hard material are nice crystals. Carefully transfer them into a small bottle with water, wash and dry them for your experiments.
* Photo 3: Add a syringe full of water to a bottle with one crystal. Hold  it by a peg and heat it above a candle.
* Right: The crystal has disappeared. It was dissolved in water.
